In the latest years, the consumption of edible flowers has a worldwide increased. In our country, the consumption of edible flowers is not yet widespread. However, in recent years some costumer shows interest in natural products wich was healthy and visually atractive. The edible flowers meet these requirements and add to their benefits the low caloric content and its qualities as natural antioxidants. There is a few local information about the species and their nutritional facts. In this context, the objective of this work is evaluated the agronomic behavior and the organoleptic and nutraceutical facts of edible flowers.Four species of spring - summer growth, and four of autumm -winter growth will be tested. That species Will be grown in pots, under polyethylene and anti-hail net, using a completely randomized design, with four repetitions (pots) of two plants per pot. The flowers will be harvested by hand and kept at low temperatura in hermetics bags where their postharvest behavior will be tested adding parameters as visual quality and organoleptic characteristics. The quality parameters will be determined by testing and the antioxidant capacity by spectrophotometry. The results will be processed by some statistical techniquesTechnical suport and training will be given to small producers and dealers of gourmet products. This project represents an alternative for its small-scale either for self-consumption or for sale. A growing information will be prepared in order to improve the possibilities of support the edible flowers grown, also inquire the possibilities of industrializing the flowers and give them added value and increase their quality and postharvest life.
